Fruit and nut balls

A guilt free snack when the sweet craving sets in!

I have always liked dry fruits and nuts. I love the frooze balls that we get in stores here, and thought this recipe was the closest I could find. This is a perfect power packed snack for those days when I pretend I am on a diet 😉

Ingredients

Makes 30

100 g raw walnuts

100 g raw cashew nuts

100 g raw almonds

50 g oats

100 g chopped dried apricots

150 g pitted dates, chopped

100 g pitted prunes,  chopped

2 tbsp sesame seeds

1 tbsp cocoa powder

1/2 tsp cinnamon powder

honey, as needed

Method

Blanch almonds and dry roast them on a medium heat for 2 minutes. Add walnuts and cashew nuts to the almonds and stir continuously for 2-3 minutes until the nuts are lightly fragrant and coloured.

Put the nuts in a food processor and process until you have a coarse powder. Add the dry fruits, oats, cinnamon powder and cocoa powder and turn on the food processor until everything has mixed well. Taste the mixture and add honey 1 tbsp at a time, until you find the right sweetness for your fruit and nut balls. I used 1 tbsp.

Run the mixture through the food processor again and add the sesame seeds.

The mixture can be whizzed to a fine paste or a coarse mixture, with occasional bites of fruits and nuts, according to your liking. I prefer a bit of chew in them.

Take one tbsp of the mixture and roll it into a ball, and then roll it in desiccated coconut. Repeat with the remaining mixture.
